Galactic targets improved food security with expanded natural preservative range
The Belgian company’s new range is based on its knowledge of fermentation techniques, and includes Galaster, a range of lactic acid bacteria ingredients to preserve food, adjust pH and enhance flavour; Galacin, based on naturally produced bacteriocins for food preservation; and an extension to its Galimax-ProMeat range with antioxidant plant extracts.
“Fermentation is the natural solution of choice for food security,” said managing director of Galactic Frédéric van Gansberghe. “In view of the increasing number of specific requests from companies dealing with food preservation, we found it necessary to expand our services starting with a precise and in-depth analysis of the problem followed by a tailor-made solution.”
In addition to the new ingredients, the company has also set up a service that it calls Food Doctor, which provides detailed analysis of the microbiological flora of a food product. Based on this information, it is then able to assess the impacts of certain species on the product’s shelf life, as well as its organoleptic properties. It can then work with customers to develop a natural shelf life extension, while taking the product’s other characteristics into account.
