Industrial food testing is important for safeguarding consumers against foodborne diseases. The presence of harmful E. coli in food products continues to be a major concern. Recent regulations require testing for stx1/stx2, eae, and O157 virulence factors. The presence of these virulence factors also means testing for adulterant O serotypes.
